Kutztown University

Kutztown, Pennsylvania

Five years ago, Kutztown University was struggling with a dated dining program and facilities, low participation, and customer complaints about the foodservice program. Administrators set out to create a best-in-class residential and retail campus dining program with limited funds and no new construction. This presentation will explain the detailed process the planning team used to discover the campus community’s foodservice needs and to introduce a highly successful, fiscally responsible 24/7 dining program.

Learning Objectives

  • Learn about no or low-cost changes to the campus dining program that can yield major positive changes in participation, retention and recruitment rates, and student success.
  • Develop a strategic direction for transforming campus dining programs that includes critical—yet sometimes overlooked—factors.
  • Recognize how a detailed phasing plan can help maximize available capital and manage physical changes to buildings with minimal impact to the campus community.
